Preheat your oven to 325 °F (165 °C). Grease and line a 9-inch round or loaf pan with parchment paper.

In a medium saucepan, combine the mixed Dried Fruits (350 g) and Guinness® Stout Beer (240 mL). Bring to a simmer over medium heat, stirring occasionally. Let it simmer for about 5 minutes, then remove from the heat and let the fruit soak for 30 minutes to absorb the beer.

In a large mixing bowl, cream the softened Unsalted Butter (110 g) and Brown Sugar (165 g) together, until light and fluffy. This should take about 3 minutes.

Beat in the egg yolks (2), one at a time, ensuring each is fully incorporated before adding the next.

In a separate bowl, sift together the All-Purpose Flour (250 g), Baking Soda (1 tsp), Ground Cinnamon (1 tsp), Ground Nutmeg (1/2 tsp), Ground Cloves (1/2 tsp), and Ground Ginger (1/2 tsp). Gradually fold the dry ingredients into the butter-sugar mixture.

Stir the soaked fruit and any remaining liquid from the pot into the batter, followed by the Milk (4 Tbsp). If using, add the zest of the Orange (1), Glace Cherries (110 g), and Walnuts (60 g). Mix until everything is combined evenly.

Pour the batter into the prepared pan and smooth the top. Bake in the preheated oven for 1.5 to 2 hours, or until a skewer inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. For an extra touch of Irish flair, brush the cooled cake with a little more porter beer or a light glaze.
