Chill the dough for 30 minutes before portioning if it feels too soft to handle.

In a medium bowl, whisk together All-Purpose Flour (500 g), Baking Powder (10 g), and Salt (1 pinch). Set aside.

In the bowl of a stand mixer fitted with the whisk attachment, cream together Unsalted Butter (330 g) and Granulated Sugar (220 g) until light and fluffy, about 3-4 minutes.

Add Large Eggs (3) one at a time, mixing well after each addition. Then add Vanilla Extract (1 Tbsp) and Limes (2).

Gradually add the dry ingredients to the mixer, alternating with the Milk (80 mL), beginning and ending with the dry ingredients. Mix until just combined.

Portion the dough into 40 g balls and place them on the prepared baking sheets, leaving about 2 inches of space between each.

Bake for 15-20 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

For the filling, warm half of the Strawberry Jam (100 g) slightly to make it easier to spread.
