Cooking Tips:
  • Cassava Prep: Freshly grated cassava works best, but frozen grated cassava (thawed and squeezed of excess liquid) can also be used.
  • Liquid Balance: Some versions use coconut milk for extra richness, while others prefer evaporated milk. Stick to 1 cup total liquid to avoid it being too wet.
  • Baking Time: It should be firm yet slightly soft in the center when done. If it’s too wet, bake for an additional 10-15 minutes.

Preheat the oven to 350 °F (175 °C). Grease a baking dish (9x9 inches or similar).

In a large bowl, combine the grated Cassava (825 g), Coconuts (80 g), Brown Sugar (220 g), Ground Cinnamon (1 tsp), Ground Nutmeg (1/2 tsp), and Salt (1/2 tsp).

Stir in the Evaporated Milk (240 mL), Butter (120 mL), and Bourbon Vanilla Extract (1 tsp). Mix well.

Add the Baking Powder (1 tsp) and mix until evenly combined. If using Raisins (4 Tbsp) fold them in.

Pour the mixture into the greased baking dish and spread evenly. Bake for 50-60 minutes, or until golden brown and a toothpick inserted in the center comes out mostly clean.
