Pit and finely chop the Cherries (150 g), then add them to a medium bowl.

Finely dice the Jalapeño Pepper (1) and Red Onion (1/4). Add them to the bowl with the cherries.

Chop Fresh Cilantro (2 Tbsp) and juice the Lime (1). Add both to the cherry mixture along with the Honey (1/2 tsp) (if using), and gently stir to combine.

Season with Salt (1 pinch) and Ground Black Pepper (1 pinch). Mix well and let sit for 10 minutes to allow the flavors to meld.
