In a food processor add Grated Parmesan Cheese (75 g) and Fresh Basil Leaves (8) and blend dry. They will combine to create a “dust.”

Pour into small bowl, rinse the food processor, and set both aside.

Cook Spaghetti (455 g) as directed.

Reserve some pasta water for the sauce.

In a frying pan add Cherry Tomatoes (600 g), Olive Oil (120 mL), and Garlic (3 cloves) and cook until tomatoes start to pop.

Pour it into the food processor and set aside pan.

Add Crushed Red Pepper Flakes (1/2 tsp), Salt (to taste), and Ground Black Pepper (to taste) to taste.

Pull apart the Mozzarella Cheese (340 g) and add to the food processor.

Blend until creamy.

Pour it back into the pan to reheat and add some more pasta water to thin out the sauce.

Add cooked spaghetti to the sauce, toss to fully coat and serve. Finish with the “dust.”
