Step 1
Peel and cut the
Mango (1)
into 1/4-inch dices.
Step 2
Cut the
Pineapples (85 g)
into 1/4-inch dices.

Cut the
Red Bell Pepper (1/4)

Orange Bell Pepper (1)

Yellow Bell Pepper (1)
into 1/4-inch dices.

Finely dice the
Red Onions (40 g)

Jalapeño Pepper (1)
, and
Red Chili Pepper (1)
. If you prefer less spice, discard the seeds from the jalapeno and red chili pepper.

Zest and juice the
Lime (1)
.
Step 6
Chop the
Fresh Cilantro (3 g)
and
Fresh Mint (2 g)
. Peel the
Fresh Ginger (2.5 cm)

Step 7
In a medium bowl combine the diced, mango, pineapple, bell peppers, red onion, jalapeño and chili pepper. Toss to combine.
Step 8
Add the lime zest and juice, cilantro and mint. Toss to combine.
Step 9
Use a microplane grater to grate the ginger onto a cutting board.
Step 10
Carefully scoop the ginger pulp into your hand or into a fine mesh sieve. Squeeze the pulp over a small bowl to capture all the ginger juice. Discard the ginger solids.
Step 11
Add the ginger juice to the salsa and toss to combine.
Step 12
Taste for seasonings adding salt and freshly ground pepper if desired.
Step 13
Serve with chicken, pork, fish or shellfish.
