Preheat oven to 350 degrees F (180 degrees C). Line large baking sheet with parchment paper.

Sift together the All-Purpose Flour (155 g), Ground Cinnamon (1/2 tsp), Ground Ginger (1/4 tsp), Ground Nutmeg (1/4 tsp), Salt (1/4 tsp), and Baking Soda (1/4 tsp). Set aside.

To the bowl of a mixer fitted with the paddle attachment, add Unsalted Butter (4 Tbsp) and Truvia® Sweet Complete® Brown With a Hint of Molasses (110 g). Cream at medium speed for 2 minutes, or until combined.

Add Unsweetened Apple Sauce (4 Tbsp) and mix until combined.

Beat in the Egg (1) and Vanilla Extract (1/2 tsp) for 1 minute.

Add the dry ingredients to the bowl and mix at low speed for about 30 seconds, or until only a few streaks of flour remain.

Remove the mixing bowl from the mixer and fold the Carrots (75 g) and Chopped Pecans (55 g) into the batter using a rubber spatula.

Using a cookie scoop, scoop the cookies onto the prepared sheet pan, make sure the cookies are spaced about 1 ½ inches apart. Press down flat with buttered hand.

Bake for 10-12 minutes.

Transfer to a cooling rack to cool completely. Repeat with remaining dough.

While the cookies cool, make the icing. In a medium size bowl add Cream Cheese (2 Tbsp) and Butter (1 Tbsp). By hand, or hand mixer, mix until creamy.

Add Truvia Sweet Complete® Confectioners Stevia Leaf Sweetener (65 g), Milk (1 Tbsp), and Vanilla Extract (1/2 tsp). Mix until combined. You want the icing to be slightly runny, but firm enough to pipe. Add more milk as needed to reach desired consistency.

Transfer to a sealable bag and knead the bag to remove any lumps.

Just before piping, trim the corner off the bag.

Pipe frosting on the cooled cookies and serve.
