Preheat oven to 325 degrees F (170 degrees C). Line a baking sheet with parchment paper and set aside.

Combine Unsweetened Shredded Coconut (300 g), Vanilla Protein Powder (4 Tbsp), and Truvia® Cane Sugar Blend Mix of Stevia Sweetener and Cane Sugar (4 Tbsp) in a medium bowl.

Beat Large Eggs (3) whites and Kosher Salt (1/4 tsp) in a separate large bowl until stiff peaks form, about 3-5 minutes. Gently fold in Pure Vanilla Extract (1/2 tsp) and coconut mixture, being careful to not defl ate egg whites.

Portion mixture into 1-2 tablespoon mounds using a spoon or cookie scoop, and place about 1 to 2 inches apart onto prepared cookie sheet.

Bake until edges are golden-brown, about 15-17 minutes. Let cool completely on a wire rack and serve.
