Preheat oven to 350 degrees F (180 degrees C); line 16 muffin cups with muffin liners and set aside.

In a large bowl, combine All-Purpose Flour (310 g), Granulated Sugar (350 g), Pumpkin Pie Spice (1/2 tsp), Ground Nutmeg (1 pinch), Baking Soda (1 tsp), and Salt (1/2 tsp); blend well and side aside.

In medium bowl, whisk Large Eggs (2) until fluffy; add Non-Fat Milk (120 mL), 100% Pumpkin Purée (225 g), and Vanilla Extract (1 tsp). Mix well.

Pour pumpkin mixture into flour mixture and stir until all ingredients are well combined.

Fill muffin cups 2/3 full with batter; set aside.

In a small bowl, add Butter (1 1/3 Tbsp), Granulated Sugar (4 Tbsp), Honeycrisp Apples (200 g), and Ground Cinnamon (1/2 tsp) and mix until crumbly.

Evenly spread topping among 16 muffin cups.

Bake for 30-35 minutes or until a toothpick inserted in the center of one of muffins comes out clean.

While muffins are baking, prepare glaze with Powdered Confectioners Sugar (55 g), Vanilla Extract (1/2 tsp), and Non-Fat Milk (4 Tbsp) and set aside. When muffins are done and cooled, top each with glaze before serving.
