Preheat the oven to 375 degrees F (190 degrees C). Sauté the Onion (1) in a medium, oven proof frying pan with Olive Oil (1 Tbsp) until caramelized, then add the roasted Sweet Potatoes (2) and Fresh Baby Spinach (30 g).

Whisk the Small Eggs (6) with Salt (to taste) and Ground Black Pepper (to taste). Pour over the vegetables and stir to combine.
