Preheat the oven to 375 degrees F (190 degrees C). Spray a muffin pan with nonstick spray.

Squeeze out all excess moisture from the grated Carrots (150 g).

In a mixing bowl, add the mashed Bananas (150 g), Large Eggs (2), melted Coconut Oil (80 mL), Vanilla Extract (1 tsp), Pure Maple Syrup (80 mL) and Molasses (2 Tbsp). Stir.

Then, add in the Gluten-Free Flour (235 g), Baking Soda (1 tsp), Ground Cinnamon (1 Tbsp) and Ground Ginger (1/2 tsp). Stir.

Fold in the grated carrots.

Transfer the batter to the prepared pan. Fill almost all the way full.

Bake for 15 to 18 minutes, or until a toothpick inserted comes out clean.
