Soak the Watermelons (3.2 kg) rind in slightly salted water overnight.

Boil the rind in the saltwater until it can be pierced with a fork.

Drain.

Boil the Granulated Sugar (1.4 kg), Distilled White Vinegar (480 mL), Ground Cloves (1/2 tsp), and Ground Cinnamon (1/2 tsp).

Pour over the rind. Let stand overnight.

Drain, reserving the liquid.

Heat the syrup.
