Beer battered onion rings - my mother-in-law taught me this. You can actually use this batter for a lot of things, like zucchini, eggplant, jalapenos, etc.

step 1
In a mixing bowl, combine Self-Rising Flour (250 g), Chili Pepper (1 tsp) and Ground Black Pepper (1/2 tsp).
step 2
In the middle of the flour mixture, add Beer (480 mL) and whisk until combined.
step 3
Let rest, covered for 1 hour. While you wait, peel Onions (2) and cut crosswise 1/3-inch thick, and separate into rings.
step 4
Heat your deep fryer to 370 degrees F (185 degrees C) with 2-inches of Vegetable Oil (as needed). Dust the onion rings in All-Purpose Flour (125 g), shaking off the excess
step 5
Generously coat the onion rings with the beer batter.
step 6
Working in batches, fry the onion rings until they are golden.
step 7
Transfer them with a slotted spoon to paper towels to drain and sprinkle them with salt to taste.
step 8
Mix Ketchup (to taste) and Sriracha (to taste) for the dipping sauce. Serve hot and enjoy!
