Preheat oven to 250 degrees F (120 degrees C).

Add Gluten-Free Rolled Oats (300 g) to a large bowl.

Add Unsalted Slivered Almonds (110 g), Roasted Pepitas (60 g), Unsweetened Coconut Flakes (75 g), Chopped Pecans (55 g), and Pumpkin Pie Spice (1 tsp). Mix to combine.

In a medium bowl, combine Vanilla Extract (2 tsp), Honey (4 Tbsp), Coconut Oil (4 Tbsp), Pure Maple Syrup (4 Tbsp), and Sea Salt (to taste). Mix well and pour into the oat mixture while stirring to coat evenly.

Pour granola onto a large sheet pan lined with parchment paper to prevent sticking.

Spread evenly over the pan in a single layer.

Bake for 1 hour and 15 minutes on the center rack of the oven, stirring every 15 minutes so the granola browns evenly.

Remove from the oven and let cool. Spoon into a container and seal. Store in a cool, dry cupboard. Enjoy!
