Step 1
Make Pumpkin Pie Spice Mix by mixing
Ground Cinnamon (8 g)

Ground Nutmeg (1 g)

Ground Ginger (as needed)

Ground Allspice (as needed)
, and
Ground Cloves (as needed)
together.
Step 2
Add 1 1/2 tsp of the pumpkin spice mix to a large mixing bowl and then add in the
Gluten-Free All-Purpose Flour (235 g)
,
Baking Powder (10 g)
,
Salt (3 g)
, and
Granulated Sugar (10 g)
. Mix until combined.
Step 3
Add the
Egg (1)
,
Canned Pumpkin Purée (40 g)
,
Butter (30 g)
, and
Milk (300 mL)
. Mix until all ingredients are combined and a smooth batter forms
Step 4
Add a pat of butter to a skillet and melt over medium-high heat. Once the skillet is hot, spoon batter into the pan and cook for 4-5 minutes, or until bubbles form. Flip and cook for another 4-5 minutes, then remove and repeat with remaining batter.
Step 5
Sprinkle with
Powdered Confectioners Sugar (to taste)
before serving. You can also add maple syrup if desired!
