Cream the Olive Oil (120 mL), Granulated Sugar (65 g), Brown Sugar (75 g), Vanilla Extract (2 tsp), and Egg (1) together in a medium bowl. Add the Almond Flour (60 g), All-Purpose Flour (95 g), Salt (1/2 tsp), and Baking Soda (1/4 tsp). Mix until thoroughly combined. Fold in the Mini Chocolate Chips (175 g).
