Step 1
Preheat oven to 350 degrees F (175 degrees C).
Step 2
In a mixing bowl, stir together the
All-Purpose Flour (310 g)
,
Baking Soda (5 g)
,
Ground Ginger (3 g)
,
Ground Cinnamon (2 g)
and
Ground Cloves (1 g)
, using whisk to gently mix well.
Step 3
In a large mixing bowl, beat
Butter (180 g)
on medium speed for 2 minutes. Beat in the
Granulated Sugar (200 g)
. Add
Egg (1)
and
Molasses (85 g)
; beat well. Using a wooden spoon, stir the flour mixture into the egg mixture.
Step 4
Shape dough into 1-1/2 inch balls, using about 1 heaping tablespoon of dough for each ball. Roll balls in
Granulated Sugar (25 g)
to coat.
Step 5
Place balls about 2-1/2 inches apart on an ungreased cookie sheet that has been lined with parchment paper.
Step 6
Bake in a pre-heated 350 degrees F (175 degrees C) oven for about 10 minutes or until light brown and still puffed. DO NOT OVERBAKE!
Step 7
Cool cookies on cookie sheet for 2 minutes. Transfer cookies to a wire rack to cool.
Step 8
When cool, melt
White Chocolate (225 g)
according to package directions.
Step 9
Dip each cookie half-way into melted white chocolate and place back on parchment paper to dry. While the white chocolate is still “melty”, decorate with Holiday
Sprinkles (to taste)
