Step 1
Remove the membrane from the back of the Pork Baby Back Ribs (1 rack) with a butter knife and a paper towel.
Step 2
Mix the Brown Sugar (25 g) , Chili Powder (5 g) , Ground Black Pepper (5 g) , Onion Powder (2 g) , McCormick® Garlic Powder (3 g) , Ground Cinnamon (3 g) , Kosher Salt (6 g) , Ground Cumin (as needed) , Ground Fennel (1 g) , and Cayenne Pepper (as needed) .
Step 3
Rub this dry rub mixture all over the baby back ribs. Then, set aside.
Step 4
Mix Onion (1) , Garlic (3 cloves) , Ketchup (235 g) , Water (120 mL) , Maple Syrup (30 mL) , Honey (40 g) , Apple Cider Vinegar (30 mL) , Dijon Mustard (30 g) , and Brown Sugar (15 g)
Step 5
Add Liquid Smoke (2 splashes) into the BBQ sauce. Be sure to only add a few drops of liquid smoke, or else the smoky flavor will overpower the sauce. Be careful not to spill the liquid smoke as the smell is not easy to wash off.
Step 6
Place the baby back ribs into the BBQ sauce. If you’re discarding the cooking liquid in the pressure cooker afterward or you’re using an already made or store-bought BBQ sauce, you should place the ribs on a trivet when cooking in the pressure cooker to preserve the flavors of the meat.
Step 7
Close lid and pressure cook at High Pressure for 16 to 25 minutes. While the baby back ribs are cooking in the pressure cooker, preheat the oven to 450 degrees F (230 degrees C).
Step 8
Turn off the heat and full Natural Release. Open the lid carefully.
Step 9
Carefully place the cooked baby back ribs on a chopping board with kitchen tongs. Cover it with aluminum foil and set aside.
Step 10
Place roughly chopped Carrots (2) into the BBQ sauce and bring your BBQ sauce to a simmer. Continue to reduce and thicken the sauce by simmering until desired thickness, roughly 6 to 8 minutes. Occasionally, stir with a wooden spoon.
Step 11
Stir in more brown sugar and additional 1 to 2 drops of liquid smoke if necessary.
Step 12
Brush the homemade BBQ sauce all over the baby back ribs on all sides including the bones with a silicone basting brush.
Step 13
Place the baby back ribs in the oven on the top rack for 10 to 15 minutes.
Step 14
Serve the baby back ribs immediately with more homemade BBQ sauce along with the carrots. Enjoy!
