Author's Notes

Store the cooled carrots in a resealable container for up to 1 week. Reheat in an oiled skillet over medium heat until heated through, 4-5 minutes. Reheat a single serving in the microwave for 30 seconds to 1 minute.

Cooking Instructions

Step 1
Add Olive Oil (15 mL) to a large skillet (one that has a lid) over medium heat. Once the oil is hot but not smoking, add the Baby Carrots (1 bag) and Salt (2 g) and toss to combine. Cook uncovered, stirring occasionally for about 5 minutes, until the carrots are bright orange and heated through.
Step 2
Add the Pure Maple Syrup (60 mL) and Orange (1/2) and toss to combine with the carrots. Bring to a boil. Reduce heat to medium and cover the skillet.
Step 3
Simmer until carrots are soft, about 5 minutes. Uncover and continue cooking until mixture is reduced by half, which should take about 5 more minutes. Add the Ground Nutmeg (as needed) and stir.
Step 4
Serve warm.
