Author's Notes

Pureed chickpeas add protein and fiber to these cookies. Try them in blondies, date-nut bread or chocolate chip cookies.

Cooking Instructions

Add Gluten-Free Rolled Oats (100 g) and Unsweetened Shredded Coconut (50 g) in a food processor and pulse until just combined.

Add Creamy Natural Peanut Butter (160 g), Vanilla Extract (1/2 tsp), Ground Ginger (1/8 tsp), and Raw Honey (3 Tbsp) to the food processor and process on high until a smooth dough is formed, stopping to scrape down the sides as necessary.

Once dough consistency is reached, break into bite sized pieces, roll into balls and refrigerate 20 minutes or so to harden (or pop in your mouth immediately!)
