Step 1
Place
Unsweetened Shredded Coconut (200 g)
,
Medjool Dates (10)
, 2 tablespoon of
Coconut Oil (45 mL)
and
Salt (3 g)
in a food processor and mix until combined.
Step 2
Take out one teaspoon of the mixture and form a ball to check the texture. If the mixture has difficulty forming a ball and is too dry, add more coconut oil.
Step 3
Taste the mixture for the right balance of sweet and salty, add the remaining salt if required.
Step 4
Place half the mixture into a silicone slice mould or line a slice tin with baking paper. Press down firmly and use the back of a spoon to even the layer out.
Step 5
Scatter the
Cacao Nibs (7 g)
over the top then pour over with the rest of the mixture. Again, use a spoon to even the layer out.
Step 6
Place in the fridge for approximately 30 minutes until firm. You should be able to lift the entire slice out easily. Cut into even bite-sized square or roll into balls. Store in the fridge for up to 2 weeks.
