Cooking Instructions

Step 1
Cut off the bottom end of the Choy Sum (340 g) and discard. Chop into 1/2-inch pieces and set aside.
Step 2
Slice the Garlic (8 cloves) thinly lengthwise and set aside.
Step 3
Peel the fresh Fresh Ginger (9 g) using the back of a spoon and mince. Set aside.
Step 4
Remove only 1/2 of the Fresh Thyme (9 g) from the stems and discard. Set aside.
Step 5
In a small saucepan over medium heat add the Tamari Soy Sauce (30 mL) , Worcestershire Sauce (60 mL) , half of the sliced garlic, and only 2 teaspoons of the Butter (45 g) and cook for 3 to 4 minutes, stirring occasionally until the sauce thickens.
Step 6
Cover, remove from heat, and hold for plating.
Step 7
Add the Granulated Sugar (10 g) and Water (45 mL) to a small bowl, stir to combine, and hold.
Step 8
Pat dry the Sirloin Steak (2) with paper towels. Season each side with Salt (2 g) and Ground Black Pepper (as needed) .
Step 9
Heat Olive Oil (30 mL) in a medium sauté pan over medium-high heat. When hot, add the steaks and sear on one side for 2 minutes.
Step 10
Turn the steaks over and add the remaining butter and half the thyme leaves. Using a spoon, baste steaks with thyme butter. Cook for 3 to 4 minutes more. Remove steaks from the pan, sprinkle remaining thyme leaves on top, and let the steaks rest.
Step 11
Heat Olive Oil (15 mL) in a large sauté pan over medium-high heat. When hot, add the remaining sliced garlic then turn off the heat. Cook for 45 seconds until golden brown. Remove garlic from the pan and place on paper towels.
Step 12
Add the ginger to the pan and sauté for 30 seconds. Add the choy sum and turn the heat to medium-high. Add the sugar mixture and Oyster Sauce (30 mL) to the pan, then toss to incorporate while cooking for 1 minute.
Step 13
Slice the steaks on the bias. Place the choy sum in the center of each plate. Drizzle each portion with Sesame Oil (5 mL) and top with the garlic chips.
Step 14
Fan out the slices of steak on top of the choy sum. Drizzle the garlic-soy infusion over the steak. Serve and enjoy!
