Set up your Instant Pot Steam with a steamer insert; pour in a cup of Chicken Stock (240 mL) and the Garlic (1 clove).

Using the “steam” setting, cook the Cauliflower (1 head) in an Instant Pot for 3 minutes, and do a quick release. Save the liquid.

Transfer the cauliflower into a food processor and pulse the cauliflower a little to loosen it up. Then add the Grated Parmesan Cheese (50 g), Chicken Stock (120 mL), and pulse to combine.

If using, add Almond Milk (1 dash) and pop under the broiler for 3 minutes for a browned topping.
