Preheat the oven to 400 degrees F (200 degrees C).
Step 2
Toss Parsnips (8) with 2 tablespoons of olive oil, Salt (to taste) , and Ground Black Pepper (to taste) .
Step 3
Place on two baking sheets, without overcrowding. Bake for 10 to 15 minutes.
Step 4
After, flip the parsnips, rotate position in the oven, and bake for about 10 minutes more (or until parsnips are crispy outside, tender inside).
Step 5
Blend Yogurt (185 g) , Parmesan Cheese (20 g) , Garlic (2 cloves) , Fresh Ginger (1 pinch) , Honey (10 g) , and Balsamic Vinegar (15 mL) in a food processor.
Step 6
Add Dried Thyme (as needed) , Fresh Parsley (as needed) , Fresh Basil (5 g) , Salt (to taste) , Ground Black Pepper (to taste) , and Olive Oil (60 mL) to the mixture. Adjust seasoning if needed.
Step 7
Serve parsnip fries with creamy garlicky herb dip on the side.
