In a large pot over medium-high heat mix the Peaches (5), the juice from Lemon (1), and Granulated Sugar (200 g). Simmer for 20 minutes.

Add in the Fresh Ginger (2 Tbsp) and Ground Cinnamon (1/4 tsp) and continue to simmer for another 10-15 minutes or until the jam thickens and does not run together when you run a spoon through it. Remove from heat and allow to cool.

Preheat oven to 350 degrees F (175 degrees C).

Cream the Butter (180 mL), Brown Sugar (4 Tbsp), and Granulated Sugar (100 g) until pale and fluffy.

Mix in the All-Purpose Flour (125 g), Old Fashioned Rolled Oats (65 g), Salt (1/2 tsp), and Ground Ginger (1/4 tsp) until well combined.

Set aside 1 cup dough. Press remaining dough into a greased and parchement-lined 13x9-inch pan to form a crust. Bake 10 minutes.

Once cooked allow to cool slightly, then spread the jam evenly over the crust. Crumble reserved dough over the top.

Bake for 20-30 minutes or until the top begins to turn brown.
