Make the beet syrup by combining the Granulated Sugar (100 g) and Water (240 mL) in a pot over medium-high heat. Stir until sugar is dissolved. Add Beet (1) and let simmer for 10-15 minutes.

Combine 2 fl oz of beet syrup, juice of 2 Limes (2), Cointreau (4 Tbsp), and White Mezcal (4 Tbsp) in a shaker. Fill with ice and shake for about 15 seconds.
