Step 1
Preheat oven to 375 degrees F (190 degrees C). Grease 12 cup muffin pans or line with muffin liners.
Step 2
In a large bowl, combine
All-Purpose Flour (125 g)

Cornmeal (90 g)

Baking Powder (10 g)

Granulated Sugar (100 g)
, and
Salt (2 g)
.
Step 3
In a seperate bowl, combine
Eggs (3)
,
Creamed Corn (1 can)
, and
Fat-Free Greek Yogurt (215 g)
until combined. Add the wet into the dry and gently mix until batter forms.
Step 4
Scoop batter evenly into each muffin cup, filling to the top for some mega muffins!
Step 5
Bake for 20 minutes or until a toothpick comes out clean.
Step 6
When warm, add a dollop of
Butter (to taste)
and drizzle the
Honey (to taste)
