Step 1
Add the
Cauliflower (1/2)
to the Thermomix jug and blend on speed 5 for 5 seconds. Pour cauliflower rice into a bowl and set aside.
Step 2
Add the
Carrot (1/2)
,
Garlic (1 clove)
, and white part of the
Scallions (2)
to the Thermomix and blend on speed 5 for 5 seconds.
Step 3
Heat the
Sesame Oil (30 mL)
in a wok over a low heat and add the carrot, garlic and scallion mixture. Stir fry until fragrant, about 5 minutes.
Step 4
Add the cauli rice and
Edamame (25 g)
beans and stir fry quickly for around 3 minutes.
Step 5
Make a well in the middle of the wok and add the
Egg (1)
. Stir until the egg is scrambled and then mix into the rest of the cauliflower rice.
Step 6
Stir in
Light Soy Sauce (15 mL)
and stir fry for another minute.
Step 7
Place in a bowl and top with finely sliced scallion greens. Serve and enjoy!
