Separate all Eggs (3).

In a large bowl beat yolks with Granulated Sugar (65 g), Vanilla Extract (2 tsp), Ground Cinnamon (1 tsp), and Ground Nutmeg (1/2 tsp) until thick.

In another bowl beat Heavy Cream (240 mL) and Whole Milk (120 mL) until thick but still pourable.

Mix egg yolk mixture and cream together until combined.

While beating, stream in Bourbon (120 mL), Dark Rum (4 Tbsp), and Brandy (4 Tbsp).

Beat egg whites until soft peaks form.

Fold whites into the mixture.

Cover the container and place it outdoors (or in a cool place) for at least 12 hours and up to 72 hours. Stir every so often.

Serve with a sprinkle of cinnamon.
