Polvorones

Toast the All-Purpose Flour (300 g), Almond Meal (100 g), and the Almonds (75 g) separately. You can do it either in a pan or in the oven. In a pan toast on medium heat, the flour will get darker but not too much, and the almonds will get slightly more yellow or golden. To toast it in the oven spread it in a tray with baking parchment paper and bake at 400 degrees F (200 degrees C).

Once the flour, ground almond, and chopped almonds get cold, sieve the flour and place everything in a bowl. Then, add the Salt (1 pinch), Ground Cinnamon (to taste), and Granulated Sugar (300 g).

Make a hole in the middle of the mix and add the Egg (1) and Lard (300 g).

Knead energetically and carefully with your hands from inside the hole pushing outside in circular movements until you get a soft and uniform dough.

Let the dough cool down for 30 minutes if it's a bit sticky and warm.

Preheat the oven to 350 degrees F (180 degrees C).

Roll out the dough to 1.5-cm or more if you wish.

Cut and shape the dough with a classic round mold or with your favorite shape molds.

Bake the polvorones for 10-12 minutes or more if needed.

Sprinkle the Polvorones with Powdered Confectioners Sugar (to taste). Enjoy!
