Cooking Instructions

Step 1
Preheat oven to 425 degrees F (220 degrees C).
Step 2
Using a paper towel, completely dry the Chicken Wings (905 g) and season with Salt (to taste) and Ground Black Pepper (to taste) .
Step 3
Place them on a sheet tray with a wire rack (or lined with parchment paper). Roast on the upper-third rack for 40-45 minutes until desired crispness and internal temperature reaches 165 degrees F (75 degrees C).
Step 4
While the chicken is cooking, add Calabrian Chili Paste (65 g) , Red Wine Vinegar (80 mL) , Granulated Sugar (25 g) , Garlic (4 cloves) , Dried Oregano (5 g) , Fresh Parsley (3 g) , Crushed Red Pepper Flakes (as needed) , Water (15 mL) , 1 Tbsp of Lemon Zest (1) , and the juice of 1/2 a lemon to a small saucepan over medium heat, and whisk until combined. Taste and adjust seasoning as needed. If the sauce is too thick, add more water as needed.
Step 5
When the wings are done, transfer them to a bowl and add the warm sauce. Toss until they're evenly coated. If desired, roast for an additional 5 minutes.
