Combine Olive Oil (1 Tbsp), Balsamic Vinegar (1 Tbsp), Salt (to taste), and Ground Black Pepper (to taste) in a small bowl. Whisk until incorporated, then set aside.

Combine your Arugula (20 g), Peach (1), Heirloom Cherry Tomatoes (150 g), Red Onions (2 Tbsp), and Fresh Mint (1 Tbsp) in a bowl and pour half of your dressing mixture over. Mix lightly.
