Step 1
Lime Jelly Layer: Heat
Water (500 mL)
,
Granulated Sugar (120 g)
, zest and 1 Tbsp of juice from
Limes (2)
in a pot. Stir to almost boiling. Add bloomed - soaked with
Water (30 mL)

Gelatin Powder (15 g)
and bring to boil again, stirring constantly.
Step 2
Tilt 6 small glasses at an angle on an egg tray or muffin tray. Pour jelly liquid into glasses. Refrigerate for 2 hours or till set.
Step 3
Blueberry Layer: Boil
Fresh Blueberries (250 g)
and
Granulated Sugar (120 g)
in a pot. Mash blueberries with a rubber spatula. Turn off heat. Press mashed blueberries through a strainer.
Step 4
Add
Water (250 mL)
and 1 Tbsp of Lime Juice, stir well and bring to almost boiling. Add bloomed - soaked with
Water (30 mL)

Gelatin Powder (15 g)
and bring to boil again. Turn off heat and cool to room temperature.
Step 5
Remove glasses of set lime jelly from egg tray and stand them up right. Gently pour blueberry jelly liquid onto set lime jelly.
Step 6
Chill for few hours or overnight till set. Decorate as desired. Enjoy!
