Author's Notes

Tiramisu tastes best after 2 days in the fridge, the flavors among the layers just sync together with every bite.

The gelatin mixture stabilizes the cream and prevents the fats and liquid from being separated over time.

Cooking Instructions

In a small bowl add Gelatin Powder (1 tsp) and Water (1 Tbsp) together, and microwave for about 15 seconds. Let it cool.

In a large mixing bowl, add Cream Cheese (100 g), sift in Matcha Powder (2 tsp), and Caster Sugar (90 g), beat together until combined.

Once nicely combined, drizzle in Whipping Cream (200 mL) and whip until soft peaks.

Next, stir in gelatin mixture and whip until it is well mixed. Set aside.

Carefully cut the Ladyfingers (12) into the desired length if needed.

In a shallow pan, stir in Water (250 mL), Matcha Powder (1 1/3 Tbsp), and Rum (2 Tbsp).

Soak ladyfinger into the pan, and transfer into a container for the first layer.

Portion out a quarter of the cream into the container.

Layer ladyfingers by repeating the steps until you finished them.

Cover your container and let it cool in the fridge at least overnight to set.

Dust the top with additional matcha powder before serving.
