How To Make Leftover Turkey Enchiladas

Make these turkey enchiladas using turkey leftovers with these easy steps:
  • Begin with mixing all the ingredients of the turkey mixture in a mixing bowl. Set aside until ready to use.
  • Pour some enchilada sauce to the bottom of the baking dish or casserole dish, just enough to cover the bottom of the dish.
  • Put some of the turkey mix in the middle of the corn tortillas. Don't forget to leave some space since you will need to wrap the filling in the tortilla.
  • Place the enchiladas seam down in the casserole dish until the dish is covered with enchiladas.
  • Pour the remaining enchilada sauce over the enchiladas and sprinkle some shredded cheese, enough to cover everything.
  • Bake the leftover turkey enchiladas in your preheated oven until the cheese on top starts to color, bubble, and fully melt.
  • Garnish it with some sour cream and fresh cilantro. Serve and enjoy while warm!

Step 1
Preheat the oven to 350 degrees F (180 degrees C).
Step 2
In a large bowl, combine Turkey (720 mL) , Yellow Onion (1) , Whole Kernel Corn (1 can) , Diced Green Chiles (1 can) , Shredded Cheddar Cheese (115 g) , Sour Cream (120 g) and Enchilada Sauce (1/2 can) .
Step 3
To a large baking dish, add Enchilada Sauce (1/2 can) .
Step 4
Add a few generous spoonfuls of the mixture to the middle of each 6-Inch Corn Tortillas (12) , around 1/3 cup. Wrap and place in a baking dish seam side down. Repeat with remaining tortillas and filling.
Step 5
Cover with remaining Enchilada Sauce (1 can) and sprinkle with remaining Shredded Cheddar Cheese (115 g) .
Step 6
Bake for 20-25 minutes, or until the cheese is melted and bubbling.
Step 7
Serve warm topped with Fresh Cilantro (to taste) and sour cream.
