To make a ginger simple syrup, combine Granulated Sugar (200 g) and Water (240 mL) in a small boiler over medium-high heat. Bring to a boil, stirring to dissolve the sugar. Add Fresh Ginger (4 Tbsp) and return to boil.

Remove from heat and steep for 30 minutes. Strain the syrup and store in an airtight container until ready to use.
