Step 1
To make the blueberry syrup, in a small saucepan combine the
Fresh Blueberries (150 g)
,
Honey (40 g)
, and
Water (60 mL)
and bring to a boil. Reduce heat to medium and mash the berries and simmer for 5 minutes.
Step 2
Run the mixture through fine sieve to remove pulp. Set aside to let cool. This will yield about 2/3 cup of blueberry syrup.
Step 3
In another small saucepan, bring
Water (240 mL)
to a boil. Remove from heat and stir in
Granulated Sugar (200 g)
. This yields about 1-1/2 cups of simple syrup.
Step 4
In a large pitcher, combine the juice from
Lemons (5)
, simple syrup and blueberry syrup.
Step 5
Pour in
Club Soda (720 mL)
right before serving.
