Step 1
To make mint simple syrup, in a small saucepan bring
Water (60 mL)
to a boil. Remove from heat and add
Granulated Sugar (50 g)
and stir until dissolved. Throw in
Fresh Mint Leaves (20)
and let it sit for at least 15 minutes.
Step 2
In a medium bowl, add the remaining
Granulated Sugar (10 g)
and remaining
Fresh Mint Leaves (20)
. Bruise the mint leaves with a muddler. Stir in mint simple syrup, juice from
Limes (2)
,
White Rum (120 mL)
, and
Coconut Rum (120 mL)
.
Step 3
Pour the mixture into a pitcher with
Ice (280 g)
and
Club Soda (480 mL)
right before serving.
