Step 1
Place the Water (600 mL) , Granulated Sugar (100 g) , Matcha Powder (4 g) , Fresh Ginger (2 g) , Ground Nutmeg (2 g) , Whole Cloves (1 g) , Ground Cardamom (as needed) , and Cinnamon Stick (1) in a small sauce pan and mix together. Place over medium heat and bring to a simmer. Simmer together for 10 minutes and the remove from the heat to cool.
Step 2
Use about 1/2 cup matcha chai mixture to each 1/3 cup of the Whole Milk (480 mL) for each latte. Froth if desired. Add more or less milk to taste.
Step 3
Sprinkle top with a pinch of matcha.
