For the waffles, mix the All-Purpose Flour (220 g), Brown Sugar (4 Tbsp), Baking Powder (2 tsp), and Salt (1/2 tsp) together in a medium bowl.

In a separate bowl, whisk together the Whole Milk (240 mL), Buttermilk (120 mL), Yolks of the Eggs (2), Butter (120 mL), and Vanilla Extract (1 tsp) and add to the dry mixture. Stir to combine.

Whisk the Egg Whites until foamy and add the Cream of Tartar (1/8 tsp). Whisk until the egg whites form soft peaks.

Spray the preheated waffle maker with non-stick spray, and pour batter in. Set to highest heat. Flip over after a few minutes. Waffles are done when they are golden. Immediately place on a cooling rack to keep crispy.

For the chai-spiced maple syrup, place the Maple Syrup (240 mL), Water (4 Tbsp), Butter (2 Tbsp), Ground Ginger (1/2 tsp), Ground Cloves (1/4 tsp), Ground Allspice (1/4 tsp), Ground Nutmeg (1/4 tsp), Ground Cardamom (1/4 tsp), and Ground Cinnamon (1 pinch) in a saucepan over medium/high heat.
