Lemon Cupcakes For Easter

In a large bowl, add Butter (120 mL) and Granulated Sugar (200 g) and mix them together.

Then, add Large Eggs (2) one at a time and continue to mix.

Then, add Vanilla Extract (1 tsp), Lemons (2), Sour Cream (120 g), and mix everything.

Lastly, add All-Purpose Flour (185 g), Baking Powder (2 tsp), Salt (1/4 tsp). Mix everything together until well incorporated.

Line the cupcake tin with cupcake liners and add one scope of batter to each cupcake liner. Bake the cupcakes at 350 degrees F (180 degrees C) for 18 minutes. Cool them completely.

In the stand mixer, add Cream Cheese (225 g), Powdered Confectioners Sugar (440 g), Butter (4 Tbsp), and Vanilla Extract (1 tsp).

Take a small portion of frosting and add Pink Gel Food Coloring (as needed). Take some Marshmallows (as needed) and cut them diagonally. Apply the pink frosting to the marshmallows. Take a cupcake, spread some frosting, and put marshmallows on it as two bunny ears. Serve and enjoy!
