Preheat oven to 400 degrees F (200 degrees C).
Step 2
Line baking sheet with parchment paper.
Step 3
Toss Cauliflower (105 g) , Sweet Corn (80 g) , Red Bell Peppers (35 g) , Onions (35 g) with Extra-Virgin Olive Oil (as needed) , Salt (to taste) , and Ground Black Pepper (to taste) .
Step 4
Roast veggies for 10 minutes.
Step 5
Add Kale (50 g) to the serving bowl. Top with roasted veggies, Quinoa (170 g) , Avocado (1) , and Sriracha Almonds (30 g) .
Step 6
Drizzle with Peanut Sauce (to taste) and a squeeze Limes (to taste) . Serve and enjoy!
