Step 1
To dice the
Seedless Watermelon (1/2)
, slice the half into two quarters, and then slice off 1/2" crescent-shaped slabs. Slice the slabs into 1/2" strips, and then into cubes.
Step 2
Dice the
Jicama (1/2)
into slightly smaller cubes, and slice up the
Fresh Strawberries (12)
. Chop the
Fresh Basil Leaves (2 g)
and
Fresh Mint Leaves (3 g)
.
Step 3
Toss the cut watermelon, jicama, and strawberries with the chopped mint, basil, and juice from
Lemon (1)
.
Step 4
In a large pot, bring the
Balsamic Vinegar (480 mL)
to a simmer. Allow it to simmer until it is thick enough to coat a spoon, about 20 minutes. The liquid will have reduced by about half.
Step 5
When ready to serve, crumble the
Goat Cheese (120 g)
over top of the salad and stir it in. Drizzle the balsamic reduction on top just before eating.
