Roasted Shrimp Cocktail

Roasting the shrimp for the roasted shrimp cocktail really brought out its natural flavor. It was also much more interesting to have the hot shrimp with the cold cocktail sauce! I just tossed them with lots of salt and olive oil before letting them go in the oven for 10 minutes. This is a classic case of a dish that is insanely easy to put together, but also looks elegant and fancy at a party!
