Step 1
Mix together Canola Oil (120 mL) , Low-Sodium Soy Sauce (60 mL) , Maple Syrup (60 mL) , Peanut Butter (80 g) , Toasted Sesame Oil (15 mL) , and Sesame Seeds (9 g) and set aside.
Step 2
In a large casserole dish, place Sweet Potatoes (120 mL) and Corn (2 ears) in 2 inches of water. Cover and heat in a microwave oven on high for 6 minutes until soft.
Step 3
Allow the corn to cool slightly and then remove the kernels by slicing them off the cob.
Step 4
Arrange Fresh Spinach (480 mL) , Quinoa (170 g) , Slivered Almonds (15 g) , Braeburn Apple (1/2) , sweet potato, and corn in bowl.
Step 5
Top with the dressing. Serve and enjoy!
