Author's Notes

Be careful with the grilling fumes, the chili flakes over a hot grill make for a very hard-to-breathe smoke!

It’s important to oil the grate well before adding the cheese.

The cheese may stick to the BBQ grate. I find it was easiest to use a metal spatula to gently scrape below the cheese to loose it up gently before flipping it.

Cooking Instructions

Step 1
Slices the Halloumi Cheese (280 g) 1 centimeter thick. Put it in a bowl and set aside.
Step 2
Combine the Crushed Red Pepper Flakes (5 g) , Oil (80 mL) , Soy Sauce (15 mL) , juice from Lemon (1) , Shallot (1) , Garlic (1 clove) , Fresh Basil (5 g) , and Ground Cumin (1 g) in a blender or food processor. Blend until smooth.
Step 3
Pour the marinade over the sliced cheese and gentle coat so they are all evenly coated.
Step 4
Marinade for a minimum of 15 minutes.
Step 5
Set the grill to 400-450 degrees F (200-230 degrees C) and oil the grates well.
Step 6
When the grill is hot, add the cheese onto the grates, make sure there isn’t too much marinade on the cheese when you put it on the grill.
Step 7
Grill them for approximately 2-4 minutes a side or until you see grill marks. Use a metal spatula and scrape gently below the cheese to loosen it off the grill before flipping it.
Step 8
Remove from grill when there are grill marks on both sides and the cheese is slightly melted.
Step 9
Set on serving plate.
Step 10
In a small sauce pan, add the leftover marinade, Oil (15 mL) and Maple Syrup (15 mL) and cook over low heat for 3-4 minutes until it is hot.
Step 11
Pour into a small bowl and serve it with the grilled halloumi! Enjoy!
