Cooking Instructions

Step 1
For the polenta, bring Water (1.4 L) , Garlic Paste (6 g) , Salt (6 g) , and Cayenne Pepper (2 g) to a simmer.
Step 2
Add Coarse Cornmeal (225 g) and simmer until cornmeal is soft, about 40 minutes.
Step 3
Add Cheese (40 g) , Butter (30 g) , and Heavy Cream (120 mL) . Check/adjust seasoning.
Step 4
Score and sautee Spicy Italian Sausage Link (1) .
Step 5
When sausage is done, set aside, add Scallions (to taste) to the pan, saute one minute and remove to absorbent paper.
Step 6
Poach the Egg (1) to desired doneness.
Step 7
Plate polenta with sausage, poached egg and scallions on top. Serve and enjoy!
