Author's Notes

If you don't have any pumpkin pie spice you make your own by combining 1 teaspoon of ground cinnamon, 3/4 teaspoon of ground ginger, 1/4 teaspoon of ground cloves, and 1/4 teaspoon of ground nutmeg.

Cooking Instructions

Step 1
Melt the Butter (240 g) in a saucepan or in the microwave. Then let it cool.
Step 2
In a large mixing bowl, combine the All-Purpose Flour (345 g) , Corn Starch (3 g) , Salt (3 g) , Baking Soda (5 g) , and Pumpkin Pie Spice (6 g) and then set aside.
Step 3
Line a small fine-mesh sieve with a paper towel. and add the Canned Pumpkin Purée (170 g) and let it drain while you are mixing together the rest of the ingredients.
Step 4
In a medium bowl combine the Brown Sugar (145 g) , Granulated Sugar (135 g) , and the cooled butter. Whisk together.
Step 5
Add in the drained pumpkin and the Vanilla Extract (8 mL) .
Step 6
Add in the dry ingredients and mix until combined.
Step 7
Add the Dark Chocolate Chips (325 g) and stir in until they are combined.
Step 8
Use a cookie scoop to form balls of cookie dough. Chill for 1 hour.
Step 9
Preheat the oven to 325 degrees F (160 degrees C).
Step 10
Bake for 10-14 minutes, then let cool slightly before serving.
