Step 1
Place a pizza stone or baking sheet in your oven, and preheat the oven to 450 degrees F (230 degrees C). On a pizza peel or cutting board, place a piece of parchment sprayed with Nonstick Cooking Spray (as needed) .
Step 2
For the crust, remove the florets from the of Cauliflower (1) .
Step 3
Place the florets in a food processor or blender and pulse until the cauliflower has the texture of sand. You should have about 2.5-3 cups of cauliflower sand.
Step 4
Transfer the cauliflower sand to a microwave-safe bowl and heat in a microwave covered, for 4 minutes. Let your cauliflower cool completely.
Step 5
Place the cauliflower in a towel and wring it tightly. You want to remove as much moisture from the cauliflower as humanly possible. I recommend doing this in two batches to get your cauliflower really dry.
Step 6
Place the cauliflower pulp in a mixing bowl and add the Parmesan Cheese (20 g) , Shredded Part-Skim Mozzarella Cheese (30 g) , Dried Oregano (as needed) , Dried Basil (as needed) , Crushed Red Pepper Flakes (as needed) , Salt (2 g) , McCormick® Garlic Powder (2 g) and Egg (1) .

Using your hands, mix until well combined.
Step 8
Form the dough into a ball and place it on the parchment-lined pizza peel or cutting board.
Step 9
Place a second piece of sprayed parchment on top of the dough ball and roll it out into a circle about 1/6-inch in thickness.
Step 10
Remove the second sheet of parchment and briefly set your pizza aside while you prepare your vegetables.
Step 11
Place the Broccoli Florets (60 g) , Red Bell Pepper (1/2) and Red Onion (1/4) on a foil-lined baking sheet. Drizzle with Olive Oil (10 mL) and sprinkle with Salt.
Step 12
Carefully transfer your dough to the hot pizza stone/baking sheet. Place your vegetables in the oven along with your dough. Bake for 8-10 minutes until the dough is golden brown. Carefully remove it from the oven.
Step 13
While your dough is baking, quickly sauté the Baby Bella Mushrooms (25 g) in Olive Oil (5 mL) for 3-4 minutes until tender. Briefly set aside.
Step 14
Go ahead and take your vegetables out of the oven when the dough is finished.
Step 15
Spread the Pizza Sauce (65 g) over the pizza dough and sprinkle with an even layer of Shredded Part-Skim Mozzarella Cheese (55 g) . Top with the roasted vegetables, sautéed mushrooms, and Goat Cheese (30 g) .
Step 16
Bake for another 5-7 minutes until the cheese is melted and bubbling slightly.
Step 17
Remove your pizza from the oven and let cool for 2-3 minutes before slicing to make sure that the crust stays intact.
