Cooking Instructions
1.
Place the Zucchini (1 cup) in a colander and press out as much moisture as you can. Set aside.
2.
Preheat a waffle iron.
3.
Whisk All-Purpose Flour (1 cup), Baking Powder (2 tsp), Simply Organic Cinnamon, Ground (1 tsp), and Salt (1/2 tsp) in a large bowl.
4.
Add Milk (1 cup), Eggland's Best Classic Egg (1), and Unsalted Butter (4 Tbsp) mix until combined.
5.
Fold in zucchini and Fresh Blueberries (1 handful).
6.
Using a 1/2 cup measuring cup, scoop batter up and pour onto preheated waffle iron and cook according to your iron’s instructions.
7.
Place a scoop of lemon ice cream on top. Serve and enjoy!
